Kimchi Pickle Recipe

Today I came up with the recipe for Kimchi, also known as Korea's pickle. It is that famous Korean pickle that everyone who watches K-drama wants to taste when they first see it. We have been seeing it for about 15 years and we have desired how it tastes. Nowadays making kimchi has become easier. Most of the required ingredients are sold in some Turkish markets. If you also want to try this recipe, enjoy it in advance.

 

Ingredients:

 

  • 2 cups of water
  • 2 tablespoons of rice flour
  • 1 tablespoon of brown or white sugar
  • 2 Chinese Cabbage ( Napa Cabbage )
  • 1 white radish
  • 1 carrot
  • 8 green onions
  • 1 small onion
  • 1 handful of pickling salt
  • 10-12 cloves of garlic
  • 1 heaped teaspoon ginger
  • 2 tablespoons red chili powder
  • 1 tablespoon fish sauce ( if there is none; 1 tablespoon soy sauce - Attention! it is very salty )
  • Garlic chives or sauce but this ingredient is not necessary

 

Method:

 

Step 1

Divide cabbage lengthwise into 4 pieces. They should stay inside each other, so do not separate the leaves. After washing the cabbages, add pickling salt and wait for about 2-3 hours to soften with the salt. Flip often. Then rewash it and leave to drain.

 

Step 2

When rice flour and water mixture is boiled in the oven, add sugar and mix. Then leave it aside to cool. 

 

Step 3

Cut carrot and white radish into julienne strips while cutting the green onions into thin, long strips. Then blend onions and garlic and add ginger. After that add this garlic sauce to the cooled sweet mixture.

 

Step 4

Nextly, mix red chili powder and julienne cut vegetables. Spread the filling on the cabbage leaves and put them into glass or clay pots.

 

Kimchi pickle is placed in the refrigerator after waiting covered for 1 hour outside. Finally, after 2 weeks it is ready to be consumed. Hope you all enjoy it! :)
